I don’t know if this is quite what you’re looking for or not, but there’s a program I use called Memento Database (https://mementodatabase.com/) that would probably work great for that. You could make a database with an entry for each person, and a tags field where you could tag them with various attributes, and then you can search for any tag or combination of tags. You might want to check out Momento Database. Not the most straightforward thing to learn, but once you have it set up it is easy to use. Lots of templates already built for project management, and you can attach files in various ways.

I used an app to put together a little database that I fill out on arrival. First and last names, city/ country, ID type/ number, arrival and departure dates. This is what our locality requires, although a notebook would have worked just as well.
Personally, as a guest I wouldn’t be comfortable sending a photo of my ID through Airbnb, so I don’t ask for that. I just take the information directly from their ID…

If you install the Momento database app, https://mementodatabase.com/, in it’s online database catalog there’s one called “BPAL Scent Catalog” that I downloaded and store all my tested scents in and have rated by what scents do and do not work. After I got about 75 scents logged it was clear what classes of notes do and don’t work and it was a lot easier after that.
