I’ve used Moneydance (https://moneydance.com/) for years, but I will probably be looking for something else since they still have not been able to get a version that will run on ARM. It has been working as expected using Rosetta, but it runs kinda slow.

MoneyDance might be worth looking into. I’ve been using it for a couple of years and I’m quite liking it. It says for personal finances, but as cash-based business it should be fine for your uses I expect.

When it stopped being developed, I moved to Moneydance in 2005 (Phew, 18 years flew fast…) and I have to say that it’s great. It does much more than Microsoft Money did in the past.

I landed on MoneyDance and have been very pleased with the outcome. Free trial, 90 day guarantee, full cost is no more than Quicken Deluxe but they upgrade you for free and has many of the same features. They actually have technical support and bank integration for automatic downloads.

It’s easy to move your data to Moneydance and it is easy to download your data from your online financial institutions. I had this very same problem. Quicken was the only thing that kept me running windoze. Then I discovered “Money Dance” at https://moneydance.com/ It is not free, but it works like Quicken, and I have been using it now for 8 years and never looked back. Love it 5-stars.

Seconded, and if you really want to keep your data on your devices have a look at moneydance using since 10y+ with no issues, can sync on multiple devices and has clients for mobile too. Onetime fee plus updates to major versions every couple of years.

Personal finances or finances software in general is a weak area for privacy conscious people. For local solutions there are plenty but my favorite is Moneydance. It has multi platform software including mobile apps. Sadly it does not sync with WebDAV specifically but it has a share folder sync that you can use with Nextcloud.
