Even though you don’t want a CRM, I suggest looking at the opensource SuiteCRM and customise it to your needs via its Studio to hide items not required.
I have used, including the old opensource SugarCRM.

Just from a quick google search, https://suitecrm.com/ seems to be a solid, free CRM tool. I can’t personally vouch for it but maybe give it a shot.

Easiest way to record customer messages?

As mentioned by a previous post, this is in the realms of CRM.
I recommend SuiteCRM (https://suitecrm.com/). It may have more than you need, but you can disable some of the modules. It runs on Apache/MySql/Php so can run on Linux.

Open source desktop crm?

We use SuiteCRM. Most online hosting services have it ready to use via cPanel. We use an online hosting service called Cloudamo which specializes in Nextcloud hosting (an open source Google Drive alternative – but it does a lot more than that). With their service, you can install dozens of other open source apps (SuiteCRM being one) along side of Nextcloud.
